Ingredients
1 cup diced tomato
1 cup diced red onion
1 Tablespoon white vinegar
½ teaspoon Kashmiri chili powder
1 teaspoon salt
1 Tablespoon coconut oil
Variation: To make it a supper salad
1 cup diced tomato
1 cup diced red onion
1 cup diced seeded cucumber
1 Tablespoon finely cut fresh coriander leaves
1 diced green pepper
2 Tablespoons white vinegar
1 teaspoon Kashmiri chili powder
1 ½ teaspoons salt
2 Tablespoons coconut oil
Method
1. Toss the tomato, onion, vinegar, chili powder, salt and coconut oil in a bowl to coat.
2. Enjoy as a side at lunch.
OR for the Supper Variation:
1. Toss the tomato, onion, carrot, cucumber, coriander leaves, green pepper, vinegar, chili powder, salt and coconut oil in a bowl to coat.
