This Salted Caramel Peanut Butter and Banana Kulfi is a combination of some of our favourite South India signature ingredients. South India has many types of bananas. Ground nuts or peanuts are a staple. The salted caramel? Well, the first two delicous ingredients needed a party hat!

This recipe comes together with ease if have an ice cream maker. If you don’t have an ice cream maker, after you’ve beaten the ingredients together in a mixer, simply pour them into a shallow dish and freeze till set. Remove from the freezer 20 minutes before serving, as the end product will have a firmer consistency. Enjoy!

Salted Caramel Peanut Butter and Banana Kulfi Recipe

Yields
6 to 8 cups

Ingredients

3 Tablespoons butter

4 Tablespoons powdered jaggery or brown sugar

1 Tablespoon water

2 Tablespoons smooth peanut butter

1 teaspoon finishing salt (pink Himalayan, fleur de sel, maldon or sea salt)

1 (13½ ounce – 370 mL) frozen can evaporated milk

Tip: keep a can in the freezer and you’ll be able to make ice cream any time you like.

1 (10½ ounce – 300 mL) can sweetened condensed milk – chilled in the refrigerator

1 cup whipping cream, whipped

1 teaspoon vanilla

2 halved, sliced bananas


Method

  1. Melt the butter and add the jaggery (or brown sugar) and water to a medium skillet over medium heat. Stir in the peanut butter once the butter and jaggery has caramelized. Sprinkle with the salt then remove from heat and allow to cool to room temperature while you prepare the ice cream base.
  2. Remove the evaporated milk from the freezer and place it for a few minutes in a bowl of boiling hot water. Open the can and add it to the bowl of an electric stand mixer and break it up a bit with a knife before beating it on medium speed until creamy and smooth.
  3. Add the chilled sweetened condensed milk and beat until well mixed.
  4. Add the whipped cream and vanilla and mix again. 
  5. Pour the mixture into the bowl of an electric ice cream maker and operate for 19 minutes.
  6. Add the sliced bananas to the caramel peanut butter mixture now and then add that mixture into the ice cream maker and operate for 1 minute more.
  7. Transfer the ice cream to a storage container and freeze until ready to serve.
